Chef Ryan McCaskey

In selecting restaurants, one of the few rating system I go by is the Michelin Guide. Restaurant Acadia received its 2-star Michelin rating this year. Headed by Chef McCaskey, he derives his cuisine with influences from his native roots in Saigon, Vietnam and growing up in the suburbs of Chicago.
Our meal started with a complimentary sparkling wine and 3 different kinds of delicious amuse-bouche. The amuse-bouche series are as follows:
The amuse-bouche was just enough to “wet” out palates and stimulate our taste-buds. The next series of pictures feature the delicious tasting-menu and the corresponding wine pairings. Starting with one of my favourite delicacies on earth, Osetra caviar!
My favourite pairing of the night, the most decadent A-5 Miyazaki steak from Japan, topped with foie gras butter, and paired with a delectable 1985 Portuguese wine. “A-5” is the highest quality of black wagyu beef that comes from Japan.
