Chef Virgilio Martinez
Visited: November 10th, 2015
After basking in the glory of the Andes, Cusco, Sacred Valley, Lake Titicaca and Puno, it was time for the husband and I to descend from over 11,ooo feet above sea-level down into the city of Lima so we can eat our hearts out. Lima is the gastronomic capital of Perú.
My tastebuds were introduced to Peruvian cuisine when we dined at Chef Virgilio Martinez’ restaurant, a 1* Michelin restaurant called “Lima” in London, UK during our visit back in October of 2014. I was instantly hooked on the “cebiche” and “causas”, and all the magical flavours that were exploding in my mouth. Naturally, I told my husband during that dinner, “We are soooo going to Perú and eat at Central for our vacation next year!”
Central is Chef Martinez’ world renowned restaurant in the beautiful Miraflores neigborhood of Lima. Chef Martinez not only creates beautifully stunning food, but focuses on the diversity of Peruvian ingredients from different altitudes and regions such as the Andes, the Amazon and the Pacific Ocean.
The Tasting Menu features the altitude where the main ingredients in each courses are found.
Overall, our experience at Central was magical as the Chef was able to take us on a whimsical tour of his country through the many diverse ingredients that we tasted. Unfortunately, we did not meet Chef Martinez that night as our server told us that he left early for another engagement.
Service was amazing, our server took really good care of us and was able to explain the diverse ingredients and the wine pairings. The staff was kind enough to call us a taxi to take us back to our hotel in Miraflores.
Eating at Central is definitely something to be experienced.
